The Cottage Food Law in Minnesota allows for individuals to make and sell certain non-potentially hazardous food and canned goods in Minnesota without a license. This includes non-potentially hazardous foods and home-processed and home-canned pickles, vegetables, or fruit with a pH of 4.6 or below. Foods that are non-potentially hazardous do not support the rapid growth of microorganisms that can make people sick.
I made like a Greek bowl so I have rice, (I would normally use chicken but we had some left over smoked beef so I used that) tomatoes, cucumbers, romaine, cabbage, your pea and broccoli greens and then a little hummus and a Greek olive oil and balsamic vinegar. Yum!
